The pickle project is currently underway! Right now, I have four quart jars simmering while the seasoning broth is boiling down. I’m a bit surprised that the 26+ pounds of daikon only produced a gallon of pickles, but there was some loss from waiting so long. I did have to borrow a wide-mouth funnel and jar lifter from a neighbor, and will definitely need to buy my own as I’ll need them for the upcoming cucumber pickle project.
I am excited to be getting started with canning, but a bit bummed that my tomato production has been abysmal this season. I had really hoped to can a lot of sauce, but that heatwave really screwed me over on that. It is to the point that I’m even a bit concerned that I won’t have any San Marzano ripen to save for seed. There are only about half a dozen fruit and none are even close to being ripe. At least if I have to buy them next season, I’ve already got the fencing up and can get them in the ground on time.
I still need to pack up for the weekend, but that won’t take long. We still don’t know exactly where we are going, but wherever we end up, I hope there’s a good bookstore.
Aaaaand that’s the end of writing while trying to pickle – my reduction just boiled over and now there’s the smell of burnt caramelized sugar wafting through the house. Back on Tuesday…
