The pizza was made, and it was good. Not as good as Round Table, but better than anything available in town and it was only my first attempt. The sauce needs tweaking, and so does the dough – I think the overnight refrigerator proofing keeps it a bit more dense. Mine came out super airy and fluffy, so I need to dial that in. It was good, but not what I was looking for.
I also made mine way too thick and had a huge crust. I much prefer a thinner, crispier crust over what are essentially bread-sticks. My wife’s came out better, as I had already realized my mistake, but I think I need to add a bit of butter or something to get the crust flavor right. Maybe baste the crust with some before adding all the toppings?
To nail the flavor, I’ll also need to source some different ingredients. For starters, I couldn’t find any linguica in town and had to substitute polish sausage. On top of that, the bacon I selected wasn’t “smokey” enough, and I need to dial in the cheese blend. The pepperoni and other ingredients were about right, so hopefully with a bit of experimenting, I’ll have the recipe dialed in and perfected. Hopefully I’ll be able to simplify the process enough so homemade pizza can be a regular in our dinner rotation.
There’s a bit of dough left, as well as the sauce and other ingredients, so I may try a small one today with some tweaks to experiment.
I also managed to get through two email responses yesterday afternoon. I still have a few more to go, but I’ll be prioritizing responding moving forward. This site isn’t generating the traffic and deluge of daily email like before, so I really have no excuse. Besides, one of the points of the reboot was to reconnect with old friends, so I shouldn’t let things slide.
Anyhow, I need to move the garden water and try making another pizza…
